Salmon, Oh salmon! you won my heart today.
Getting back on track means exercise plus healthy eating, so I decided to make broiled salmon fillets with lemon asparagus. Salmon contains high levels of omega-3 fatty acid that helps lower elevated fat (triglyceride) levels in our body causing heart problems. I personally love Atlantic Salmon which I used in this recipe since it has milder flavor, bigger flakes, and amazing texture.
I would say that this is my seafood alternative for pot roast with horseradish sauce. :)
Ingredients
Marinade (good for 1.5 lb. salmon fillets) 2-3 Tbsp prepared horseradish 2 Tbsp minced garlic 3 Tbsp chopped fresh dill 1/4 cup white wine 1/4 cup freshly squeezed lemon juice (about 1/2 lemon) zest of 1 whole lemon salt & pepper to taste
Horseradish sauce (optional) 1 Tbsp prepared horseradish 1/2 Tbsp chopped fresh dill 1/4 cup lemon juice lemon zest
Directions
In a ziplock bag, pour marinade over salmon fillets. Place the bag in the refrigerator and marinate for about 30 minutes.
Heat the pan on high heat and coat with olive oil.
Sear the fillets for approximately 1 minute until you get that beautiful golden crust. Sear the skin-side twice as long as the flesh-side.
Transfer the fillets to a baking sheet lined with foil.
Baste the fillets with the marinade and broil for 3 minutes.
Repeat step #5.
Drizzle with homemade horseradish sauce and serve with your choice of vegetable.
Tip: Always cook fish skin-side down first to keep the flesh from drying out and to give good crisp to the skin.
