Chunky Monkeys (Peanut Butter Banana Cookies w/ Dark Chocolate Chunks)

Dessert…Yup! Sweets finally stole a spot on Chef Ary’s page. I cook a lot but baking has always been a challenge to me. I don't often cook by exact measurements; I try to play with the ingredients and adjust the taste to my liking. Baking is more of a science where every ingredient serves a unique function that follows certain measurements. Alteration in baking is minimal but that won’t keep me from making a dessert with a twist!
Cookie is something I can make in my kitchen in an instant. So I decided to make some to satisfy my sweet tooth cravings.
Ingredients
1 organic ripe banana
¾ cup organic peanut butter (plain/crunchy)
1 cup brown sugar
1 1/3 cup all-purpose flour
½ tsp baking soda
1 cup vegan dark chocolate, roughly chopped
Directions
1. Preheat the oven to 350F.
2. Mash bananas using a hand mixer, combine with peanut butter and brown sugar. Mix well.
3. In a separate bowl, sift flour, salt and baking soda together.
4. Combine dry ingredients with wet ingredients using a stand mixer (paddle attachment) or mix by hand until evenly mixed.
5. Fold chunks of chocolate in the cookie dough.
6. Scoop a spoon full of dough. Form dough into balls and flatten them like cookies.
7. Bake for 15 minutes.
8. Serve warm and enjoy with a cup of hot milk or coffee.

Aside from being less chemically processed, I prefer using raw brown sugar than refined white sugar because it imparts a stronger caramel flavor and color. Semisweet chocolate may be used instead of dark chocolate depending on your preference. I also used ripe banana in replace of eggs to add extra flavor and make it vegan.
