I'm in love with the Pancake

Who would say no to light, warm, and fluffy pancakes??? I won't.
I never really enjoyed breakfast until I came up with this wonderful recipe. It's like falling in love for the very first time. Pancakes is probably the easiest recipe to make from scratch. Just follow these 3 easy steps and it will make you feel like an expert.
1. Mix dry ingredients together and do the same to wet ingredients. Place in two separate bowls. 2. Combine dry ingredients and wet ingredients. Mix until well blended. 3. Cook, flip, and eat.
There is really nothing more else to say but try this recipe out and include it in your daily breakfast menu :)

Prep Time: 15 mins Cooking time: 2-3 mins each pancake Yield: 8-9 fluffy pancakes
Ingredients
2 C All purpose flour 2 Tbsp Sugar 2 tsp Baking powder 1/2 tsp Baking soda 1/2 tsp Salt 2 Tbsp Flaxseed meal 2 C+2 Tbsp Almond milk or any non-dairy milk 2 tsp Apple cider vinegar 2 Tbsp Coconut oil Maple syrup Peanut butter Fresh fruits
Directions
1. Mix all liquid ingredients together and flaxseed meal. Let sit for about 5 minutes. 2. Meanwhile, mix the rest of the dry ingredients in a separate bowl and form a crater. 3. When the liquid mixture is ready, combine it with the dry ingredients by pouring liquids in the crater and stirring alternately. Stir in a circular motion from the center going outwards, slowly incorporating dry to the wet ingredients. 4. Set the stove to medium high heat and coat the non-stick pan with coconut oil. 5. Pour about a 1/3 C of batter, overflowing. 6. Reduce heat to low when the pancake is leavened enough. 7. Let the top part dry out, holes will appear when it's ready to get flipped. 8. Cook the other side for 1 1/2 minutes. 9. Repeat steps 4-8 to the rest of the batter. No need to coat the pan with coconut oil. 10. Smother your pancake stack with maple syrup, top with your favorite fruit. Spread a generous amount of peanut butter in between pancakes for extra treat. YUM!

For the chocolate lovers out there, I suggest to incorporate your favorite chocolate candy in this recipe. It could be Ferrero Rocher, chocolate covered macadamias, Reese peanut butter cups, Toblerone and a lot more. Coarsely chop chocolate and fold into the batter. Easy to make heavenly breakfast, yeah?
