The Great SPAM Musubi

Are you the type who carries food around, eats on the desk, or just someone who loves snacking? This popular Hawaiian snack/lunch on-the-go will save the day.
It's basically a giant sushi with SPAM. I know it's different, but I really think it's a genius alternative to raw fish that is perishable and expensive. I want to give credit to all my friends from Hawaii who introduced me to my ultimate favorite snack, the great SPAM musubi :)
Ingredients 3 C Japanese rice 1 Can Lite SPAM (low sodium) 1/4 C Shoyu 1/4 C Mirin 2 Tbsp Cooking Sake (my secret ingredient; but totally optional) 2 Tbsp Light brown sugar Nori, 5x2 cut Furikake (optional)
Directions
Japanese Rice 1. Rinse the rice grains with water until it turns almost clear, 3-4 times. 2. Add water and cook rice as instructed. 3. Once the rice is done, transfer to a bowl and let cool by cutting and folding. Do not press it down to retain its fluffiness. Set aside.
Teriyaki SPAM 1. Slice SPAM about 1/4" thick or use a spam slicer. 1 can = 9 slices. 2. Combine shoyu, mirin, sake, and brown sugar in a bowl. 3. Mix until sugar is fully dissolved. 4. Place the SPAM slices in the bowl of your previously made teriyaki sauce. 5. Marinate for about 15 minutes. 6. Heat a pan, cook both sides of each SPAM slice until the sauce has caramelized. No cooking oil needed. 7. Set aside on a plate without stacking to prevent sticking from each other.
Note: Musubi makers can be bought online or at Daiso (Japanese store).
To Assemble 1. Place a piece of nori on a plate or clean cutting board, shiny side down. 2. Put the musubi mold on top of the nori, make sure it's centered. 3. Add about 1/4 C of steamed rice and spread evenly. 4. Press the mold down to keep the rice intact. 5. Remove the mold and soak it in a bowl of water. This will help prevent the rice from sticking to it.

6. Sprinkle furikake on top of the molded rice. (optional) 7. Place a slice of teriyaki SPAM. 8. Wrap the nori around it, and seal the ends by your wet index finger. 9. Wrap individually in cling wrap if desired.
